MANGALORE BUNS



½ kg Maida/All purpose flour (keep a handful for kneading)
1 ripe Banana (medium sized)
½ cup Curd/Yogurt
8-10 tsp Sugar
1 tsp Jeera (cumin seeds)
2 tsp Til (sesame seeds)
1 small tsp Baking soda
½ tsp Salt
Oil for deep frying

1.      Firstly mash the banana with your hands.
2.      Add curd, sugar, jeera, til, soda and salt to banana and mix it properly till sugar is diluted.
3.      Add Maida to the banana mixture and make a dough like of chapatti. Add water only if required, ideally I do not add water. Cover and set aside for 4-5 hours. I always make it overnight. So that I can make it for breakfast.
4.      Heat oil in a frying pan on low heat.
5.      When the oil is hot, make buns, like you make puri from the dough by using rolling pin, some people pat them in between your palms to make pooris, but I prefer rolling pin. The Buns should be thick (like bread) and not flat like puri.
6.      Drop the Buns in oil and deep fry on both sides until they turn brown; Note: While deep frying, press and keep them inside the oil for a few seconds. Remove from oil and drain on paper towels
7.      Serve hot.

I like it with hot cup of tea and enjoy !!!!!!!!!!!!!!1
